I am late with this recipe but I was determined to post, I slept at 12.30 am tagging clothes, then I had to take them to the consignment place after work and that took forever. I wish I could volunteer to help at the sale but with two kids to take care of, it is kinda hard…now to what I wanted to post…
This is from Martha Stewart’s Everyday Food
1.5 cups old fashioned rolled oats
.5 cup all purpose flour
.5 cup raisins
.5 teaspoon baking soda
.5 teaspoon salt
6 TBL unslated butter
.5 cup packed brown sugar
.25 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract

1.Preheat oven to 350 degrees. I a medium bowl, whisk together oats, flour, raisins, baking soda and salt and set aside. Using an electric mixer, beat butter and sugars until light and fluffy, scraping down bowl as necessary. Add egg and vanilla: beat until combined. Gradually add oat mixture, beat until just combined.
2. Drop dough by rounded tablespoonfuls, 2 inches apart, onto two baking sheets. Bake until cookies are golden brown but still soft, 12 to 16 minutes, rotating sheets halfway through. Cool 5 minutes on sheets, transfer cookies to a wire rack to cool completely. MAKES 24
