I love Mandazis. They come in all shapes and sizes. If you have been to Kenya and have never had Mandazis, then this is an open invitation to you to come on over and have some with hot chai.  If you have been and have been wondering how to make them, I have the recipe for you.   I have to confess that I did google and most of the recipes were the same though they called for different quantities of ingredients.   Here is what I decided to go by:

2 cups white flour
1/2 cup sugar
1/2 cup milk
1 egg (beaten)
2 Tbl of butter (melted)
2 teaspoons baking powder
1/4 tsp tea masala or ginger or even all spice
Vegetable or Canola oil to fry

Mix the sugar, milk, egg and butter.
Add the flour, baking powder and tea masala to form a soft dough that is not sticky. You can add more flour if you need it, but the dough should be soft.
Roll the dough on a lightly floured board until it is 1/4 inch thick.
Cut into triangles or whatever shape you prefer and deep fry until golden brown on both sides.
Make sure the oil is hot before you put in the dough and you can test this by putting in a tiny bit of the dough and if it rises up, the oil is ready.
Enjoy with hot steaming burn your tongue chai!

  2. Oh yeah, I forgot about ironing. It’s been sooooo long since I have done that chore! I am so grateful that my husband has wrinkle free shirts to wear to work!
